QUICK PROSCIUTTO AND MOZZARELLA SALAD


I don't make this salad very often but when I do, it always seems to be a hit. There aren't too many ingredients but it works well anyway.

It's a quick one. Bish, bash, bosh as Jamie Oliver says.

The original recipe for this salad doesn’t have mozzarella but I added it in because I think it's lovely with the crisp prosciutto.

It's best enjoyed with some toasted pitta bread drizzled with olive oil, so ignore the optional thing I said down below....

Ingredients

4 Slices of prosciutto or smoked ham
A Handful of cherry tomatoes cut into halves
1/2 a bag of rocket
125g Mozzarella ball torn into pieces

For the dressing 

2 Tablespoons of olive oil
1 Teaspoon of runny honey
1 Teaspoon of wholegrain mustard
2 Teaspoons of white wine vinegar
Sea Salt
Pepper

+ Optional

Wholemeal pitta bread toasted and cut into strips

First things first

Chop two slices of your prosciutto up finely. Pop the other two slices of prosciutto under the grill until they are crispy and chop also.

Method

1. Pop the rocket and cherry tomatoes onto a plate or into a bowl.
2. Mix the olive oil, honey, wholegrain mustard and white wine vinegar. Season with pepper and sea salt. Add the non crispy prosciutto to the dressing and mix.
3. Tear the mozzarella ball into pieces and place on top of the rocket and tomatoes. 
4. Pour over the dressing and top with the crispy prosciutto.

Easy peasy lemon squeasy.
